When you are hungry and need to eat LOTS, turn to your friendly can
opener. Open and drain a can of green beans (or artichokes or...) and
put contents in a bowl. Add thinly sliced onion, toss with a little
salt, some dried tarragon or thyme, and a squirt of lemon juice or
vinegar. Eat at room temp, cold or hot. Okay to eat while standing in
front of the refrigerator with the door open.
Another tip: Double the amount of sauce and halve the amount of pasta.
Of course, this doesn't work if your sauce is mostly butter or oil.
